Mexican Street Corn

Is there anything better than fresh, sweet corn in the summer? Yes there is when it’s topped with lime, sea salt, ancho chili garlic butter, cilantro and a bit of cheese. This Mexican street corn inspired recipe is just what our Saturday night needed. Serve with tacos and you have yourself a very delicious dinner.

Mexican Street Corn

Serves 4

Ingredients:

  • 4 Non-GMO ears of corn
  • 2 Tbsp. butter or ghee, melted
  • 1/2 tsp. ancho chili powder
  • 1/2 tsp. garlic powder
  • 1/4 tsp. smoked paprika
  • 1/4 tsp. sea salt
  • Maldon sea salt, for garnish
  • lime wedges
  • Chopped cilantro
  • Goat or cow feta, crumbled

Directions:

  1. Preheat grill to 400 degrees F. Remove the husks and silk from the corn.
  2. Melt the butter and add the chili powder, paprika, garlic powder and sea salt.
  3. Place the corn on the grill and cook until charred on all sides. Approximately 10 minutes. Remove from the grill. Brush the corn with the melted butter, sprinkle with Maldon sea salt, cilantro and squeeze the fresh lime over the corn. Sprinkle with feta. Serve.
