Grain Free Banana Muffins


This muffin recipe is really quick to make. Everything goes into a food processor making it quick and easy to clean up. You will never know these muffins are missing dairy, gluten or sugar. Enjoy!


Grain Free Banana Muffins

Makes 18 muffins

4 ripe bananas (2 cups mashed)

4 tablespoons ground flaxseed

2 tablespoons melted coconut oil

1/2 cup nut butter (I used almond chia butter)

1/4 cup coconut milk

4 eggs, room temperature

1 tablespoon vanilla extract

2 cups almond flour

1/3 cup coconut flour

1 tsp baking soda

2 tsp baking powder

1/2 tsp sea salt

1/2 cup dark chocolate chips (I used Ghirardelli) plus Lindt dark chocolate with sea salt for the top of each muffin



  1. Preheat the oven to 350 degrees F. Line 2 muffin tins with paper or parchment liners.
  2. Place the bananas, flax, coconut oil, eggs and vanilla extract in the bowl of a food processor. Blend until smooth.
  3. Add the almond flour, coconut flour, baking soda, baking powder and sea salt. Blend until smooth.
  4. Stir in the chocolate chips.
  5. Divide the batter evenly into the prepared muffin pans. Break 2 – 3 squares of Lindt chocolate into small chunks and place a little piece on top of each muffin. Place in the oven and bake for approximately 20 minutes.
