90 Second Chocolate Mug Cake

Introducing the fastest and easiest cake you will ever make in your life, paleo chocolate mug cake. The best part of this cake is that it’s healthy and does not contain refined sugar or flour and uses healthy fats. Yes, a cake you could even eat for breakfast. This little cake is high in protein and low in carbohydrates and it’s chocolate. Who wouldn’t love this?

I have been playing around with this mug cake for a few days now, experimenting with flavours and additions but this is my favourite. If you love coffee like I do and  have expresso powder, add a few pinches to make this a mocha cake. I serve it with Greek yogurt, goat yogurt or for true Paleo serve this with some whipped coconut cream, add a few berries, devour.

Chocolate Mug Cake

Serves 1
1 tablespoon coconut oil or organic butter
1 egg
1 heaping tablespoon raw cacao powder
1 teaspoon pure maple syrup
2 tablespoons unsweetened applesauce
2 tablespoons almond flour
1/4 teaspoon baking powder
1/4 teaspoon vanilla extract
pinch of sea salt

In a coffee mug melt the oil or butter in the microwave. Remove and add in the egg, cacao powder, maple syrup, applesauce, almond flour, baking powder, vanilla extract and sea salt. Stir to combine. Place the mug in the microwave and heat for 90 seconds. Remove and turn out onto a plate. Serve.
